Rocky Road Slice
Melt 400g dark chocolate and 2/3 cup thickened cream. Stir in 200g mini marshmallows, 200g crushed nuts and 200g glace cherries.
Press into slice tin lined with baking paper and refrigerate to set.
Refrigerator Cookies
¾ cup sugar
1 egg
½ tsp vanilla
2 cups self-raising flour
½ tsp salt
125g butter
2 tablespoons milk
Place sugar, egg, vanilla, salt and half the sifted flour into a large bowl and stir. Melt butter and add milk, then pour liquid into bowl and beat. Add remaining flour and mix thoroughly. Divide mix into two, and shape each into a roll approx. 2 ½ cms in diameter. Roll in plastic wrap, and refigerate for 30 mins.
Unwrap and cut with a sharp knife into 1 cm slices. Put on lined baking tray and top with ½ glace cherry or 100s and 1000s.
Bake at 180-200°c for 12-15 mins.
Coconut Lemon Slice
125g copha
400ml condensed milk
250g plain sweet biscuits, crushed
¾ cup coconut
grated rind of 1 lemon
Gently melt copha and add condensed milk. Add in all the other ingredients and stir well. Press firmly into slice tin lined with baking paper. Cover with lemon icing (see recipe below).
Lemon Icing
1 cup icing sugar
2 tablespoons lemon juice
2 tablespoons boiling water
Sift icing sugar into saucepan, add juice and water. Stir over low heat until just warm, then pour onto slice.

Impossible Pie - Sweet.
I love this recipe because it is easy, quick and can be enjoyed both hot or cold. It was very popular when I was cooking in the army.
4 eggs
1 cup castor sugar
1 cup desicated coconut
125g melted butter 2 tsp Vanilla ess.
1/2 cup plain flour 2 cups Milk
Preheat oven to 170 c. Place all ingredients into mixing bowl, mix well. Pour mixture into greased flan tin or pie dish. Cook for approx. 30 mins until firm. Crust on top should be golden brown and will start to form cracks near end of cooking. Don't worry as the top settles on cooling. The mixture settles into three parts during cooking. You get a base, custard type filling and nice coconut cake like topping.

| No Bake Chocolate Cake |
This is a quick and easy recipe to make, but does need some standing time so you need to make it at least four hours before eating. You will need:
1 packet choc ripple biscuits 300ml cream
some sherry or other favourite liqueur - Grand marnier etc.
4 tspn icing sugar 1/4 tsp vanilla essence
Whip cream with icing sugar and vanilla essence until firm peaks have formed. If using some type of alcohol - brush lightly each biscuit with liqueur and then spread each biscuit with cream and as you go stick the biscuits together to form a log. Once all the biscuits are joined cover log with cream.
Stand in fridge 4 or more hours. The longer it stands the softer the biscuits get. I like the textrue after four hours. If decorating it only do so just before serving. As you can see it can be made into different shapes.
By the way Aunty Snag says Butternut snaps taste just as good and if you are in a big hurry you can quickly dip the biscuits in fruit juice or milk so they go softer quicker. Thanks Snag mmmmm Delicious! |

I really love this recipe not just because it is delicious but it is so easy to make.
Grilled Bananas in Sherry Sauce
4 large bananas (or 6 small ones) 1 tbspn. golden syrup
1 tbspn. butter 1 tbspn. brown sugar
2 tbspn. sherry or brandy
Method: - Melt butter, brown sugar, and syrup under the griller in an ovenware dish, add sherry. Cut bananas in half lengthwise, place in sauce, put under griller. Cook several minutes on either side,
Serve with ice cream, eat while warm.
Refuse seconds though as it is a little fattening.

Wonderful for stewed boiling fruit which is not too sweet. You can use apricot, ruhbarb, apple etc.
Mix half a cup of sugar and 2 tablespoons of butter together.
Beat to a cream.Then add 1 egg and 1/2 cup of milk. Sift in 1 cup S R flour. Mix well.
Put boiling fruit in a 2 litre ovenproof dish. Fruit should come about half way up the dish. Pour mixture evenly over the hot fruit. Bake in a moderate oven for 20 mins.
Serve hot with cream. Also very nice with icecream and a little cream.
Some family members have been known to eat left overs for breakfast, of course we did it was much better than having to eat mushy warm wheetbix. Wouldn't you agree Scott? |

20 Pascall marshmallows
120 grams butter
51/2 cups rice bubbles
Melt butter and marshmallows over low heat. When melted remove from heat and mix in the rice bubbles.
Tip mix into slice tray or baking tray. Firmly push down with back of wooden spoon until mixture is evenly distributed across tray. Set in fridge approx 1 hour. Cut and serve |
Peach Slice
800g Peaches (tinned)
600ml sour cream
2 packets cake mix (Black n Gold is good)
150g margarine or butter
½ cup coconut
Cinnamon
Mix cake mix, coconut and marg and press into slice tray. Bake @ 160c for 20 mins.
While base is cooking drain peaches well then mix into sour cream.
When base comes out of oven add peaches and cream topping while base is still hot. Sprinkle with cinnamon then return to oven for another 20 mins.
FREEZER CHOCOLATE CAKE
¼ cup cocoa 1½ cups sugar
¼ cup drinking choc Tbsp vanilla
½ cup boiling water 3 eggs
185g marg 2 cups SR flour
¼ tsp carb soda ¾ cup milk
Mix water, cocoa and drinking choc and let cool.
Cream together marg, sugar and vanilla.
Mix in eggs and cooled cocoa.
Add remaining ingredients and mix.
Use about a 10” tin and bake at 180 degrees for about 35 mins.
Leave to stand in the tin for 5 mins before turning out.
